“I have two national championships, just not in football. It’s in culinary. So I had one national championship we won in Las Vegas. It was against 500 colleges and universities, and I had North Dining Hall chef Greg Larson as my partner in that event in 2012, and then last year I won the nationals for the Chef of the Year [through] NACUFS, a college and university food service, so I won among 60 other universities actually. So we won the national championship….It was an immense joy and a pride for me. I think that was my shining moment for being here for the last ten years.”
